If you set the trigger to Any Document Signed instead of your specific session contract this fires whenever she signs anything. Be specific about which document triggers this workflow.

If you skip the Update Pipeline Stage action your pipeline will still show Contract Sent instead of Booked. Always update the pipeline so your visual tracking stays accurate.
Every workflow downstream looks for the booked-client tag. If you skip this action those workflows may not route her correctly later.
Test with your own contact first. Do not consider this workflow done until every box below is checked.
Make sure the trigger is set to Document Status equals Signed or Completed not just Document Sent. Sent means you sent it to her. Signed means she actually completed it.
Go into the Update Pipeline Stage action and make sure the correct pipeline is selected and the stage name matches exactly what you named it in your pipeline settings.
Add a filter to the trigger so it only fires once per contact. Look for the Already In Workflow or Unique Event setting inside the trigger options.
